Lemon Tea Cake

Little Chef A wanted to have a tea party. We searched and searched and found this Lemon Tea Cake recipe. I have been reminded ever since we printed it off that we needed to make it! The tea party was a month away, but the planning had begun and it just "had to be the part of her dreams." She was so excited when we finally were able to make this! The first thing we did was zest and juice one lemon. Since the cake and the glaze each required half we split it into two bowls. The ...

Chicken Enchiladas

We have one recipe for enchiladas we have been using since I was little, well I added some beans to it over the years. I found this Chicken Enchilada recipe and had to give it a try. I already had my shredded chicken so putting this together wasn't very difficult. I did adapt this recipe quite a bit so that the prep work wouldn't be as time consuming. The onion and garlic was sauteed. Then all the spices were added in to toast for a quick minute. The corn and chilis were added and ...

Enchilada Sauce

Often times I want to make enchiladas and I do not have enchilada sauce in my pantry. I  tried once before to make my own sauce but did NOT like the results. I thought we should give it a try. We were making Tyler Florence's enchiladas (spoiler alert!) and thought it was the perfect time. In the comments of his recipe someone posted an enchilada sauce recipe. I used that as a base and changed it to our liking. The ingredients are easy. Everything was measured out and put in the same bowl. ...

Chicken and White Bean Chili

After roasting two whole chickens and peeling the yummy meat off of it we had to figure out what to make with it all. I knew that wasn't going to be a hard task. We came across Chicken and White Bean Chili from Good Housekeeping.  I made a few adaptations to fit our lifestyle. When we have busy days, soccer is what is keeping us busy right now, I need a slow cooker meal to start in the morning and forget about. Whenever we get home dinner is ready to go! Usually at that time my ...

Roast Sticky Chicken-Rotisserie Style

It seems a lot of the recipes we have in reserve to try require shredded chicken. I thought we could try to make our own from a whole chicken. I was hoping if we roasted two chickens the time and effort would be worth it and we would have enough shredded chicken for multiple meals. We found Roast Sticky Chicken-Rotisserie Style. It had great reviews and everything I have made from allrecipes with great reviews has been great. I was confident this one would be just as wonderful. We started ...

Homemade French Baguettes

We have made quite a few different French Bread recipes. They all take about 3 hours to make. It is hard to find 3 hours where we are not on the go. This recipe takes about 1.5 hours start to finish. I was skeptical it would taste great because the time was cut in half, but it had great reviews so we decided to go ahead and try it. The yeast, water and honey were added together until foamy. While we were waiting Little Chef D measured out the flour and salt. After foaming the salt/fl...

Sesame-Ginger Salmon en Papillote

Today we have an impressive meal to share. This was our very first time trying it. What I love about Sesame-Ginger Salmon en Papillote is the sauce and the convenience of all the vegetables and fish in a cute little packet. Pass one out per person and dinner is served! We didn't change to much of this recipe. The marinade was made almost as directed. Little Chef A poured the sesame oil out too fast and some spilled over the teaspoon into the bowl. She wasn't sure what to do. At the same time ...

Off On Vacation

The Little Chefs are off track so we have been doing some traveling. We have had a rough few months and have needed to take a break and just have fun away from home! Denver was last week which was a work and play trip. We are on our way home from Southern California today which was a play trip. I'm hoping to stop by the M&M; store in Vegas today. I told the Little Chefs about it weeks ago when we were planning the details, but then plans were drastically changed. I'm still hoping we can ...

To Die For Blueberry Muffins

We saw some fresh blueberries and wanted to do something with them. We looked through one of our favorite recipes books and found To Die For Blueberry Muffins. Little Chef A and Little Chef D were working together this time on this recipe. Little Chef A measured out the flour, salt and baking powder.  I helped her measure out 1/3 cup vegetable oil in a 1 cup measuring cup. She then cracked an egg to add to it and then filled the measuring cup the rest of the way with milk. It was an ...

Mississippi Mud

This year for Little Chef Dad's birthday Little Chef A HAD to make a cake. I convinced her to make her Dad's favorite birthday dessert, Mississippi Mud. When he was growing up there was an older lady in the neighborhood with the exact same birthday. She would bake Mississippi Mud and bring some to Little Chef Dad wishing him a happy birthday. I remember being newly married and getting taking a message from this lady still wishing him a happy birthday. Somehow one of his siblings was able ...

Caprese Tartlets

When Little Chef A first made Crostini Alla Romana it was successful except the bread was too thick.  Caprese Tartlets by Melissa D' Arabian have pretty much the same ingredients. Tarlets are small and that is what my Little Chefs love to eat; anything small. Little Chef A used one of our favorite tools, a pizza wheel, to cut off the crust. She then used a rolling pin and rolled it as flat as she could. The now squashed bread was passed to Little Chef D who brushed both sides with olive ...

Hammond’s Candy Factory

We have been on vacation in Denver, CO for the past few days. Hamond's Candy Factory is one of the places we visited. We were able to go on a 30 minute tour to see how the candy is made. The Little Chef's eyes were opened and they were very excited to see anything they could. All the candy here is made by hand. They were making candy trees the afternoon we visited. We were able to watch part of the process.  The man in the orange made the candy from 3 basic ingredients. He is responsible for ...

Homemade Frozen PB&J Sandwiches

Pre-made peanut butter and jelly sandwiches are very convenient. We were at Costco a while ago and Little Chef Dad wanted to buy some from the freezer section. I understand they are great to take for a last minute outing or drive through the canyon, but I have a hard time paying that much for something I can make at home for MUCH less. We have used these molds before for Chicken Pot Pie Turnovers. This time we made our own pre-made peanut butter and jelly sandwiches. It was very ...

Perfect Omelet

Earlier this summer our family went on vacation...more like a family reunion hop. We were bouncing from one to the other not spending the entire time with either family. For some strange reason two reunions on different sides of the family were scheduled for the exact same days. Super inconvenient for us, but we worked it out as best we could while attending both. In our travels we stayed at a hotel that served breakfast. This was not just the limited choices of cold cereal and muffins ...

Zucchini Carpachio

With the abundant zucchini being produced in the gardens we searched for a different zucchini recipe. We found Zucchini Carpachio which intrigued us because it was very quick, easy and required minimal ingredients! Requiring the zucchini to marinate for a while before serving was a bonus! One less last minute part of the meal to make! The first step was to make the marinade. One half of a lemon was squeezed - still a hard task for Little Chefs. They were able to measure out the olive oil, ...

Incredible Punch

Incredible Punch lives up to its name. It is very tasty! We all raved about this recipe and loved every sip! The key to this punch is to make it the night before serving.  Most of the ingredients are mixed together then put in a container (we used an ice cream tub) to freeze overnight. We found it best to break up the big piece of punch with a knife before putting it in a punch bowl and adding the ginger ale and raspberry soda. When everyone is serving their own they will be able to get ...

Chicken Parmigiana

I always like tried and true recipes. One of my favorite places to find recipes is allrecipes.com. I love to read the reviews and make some adaptations to the recipes. Chicken Parmigiana was one of those recipes. It was my turn to choose the recipe and I knew Little Chef C would be able to execute it easily. It is very simple. Only dipping the chicken in egg then breadcrumbs, pouring sauce over everything, mounding cheese on top. She didn't think it was that much fun because she didn't get ...

Warm Summer Squash Salad

We first had this Warm Summer Squash Salad about two summers ago. We really enjoy the taste of balsamic vinegar. When our gardens are producing A LOT of summer squash we get tired of the same recipe. This is a great alternative with a strong balsamic vinegar flavor. The first step is to cut the summer squash into half moons. You could do a circle, but they are too big for my Little Chef's mouths. It is easier to prep the food to their size instead of cutting everyone's plates while mine is ...

Chicken Pot Pie Turnovers

For Little Chef D's birthday Grandma gave her some cooking supplies. Grandma did think it was a little strange to give such a young girl a gift like this, but Little Chef D was over joyed! One of the things in that bag were a variety of sizes of turnover molds. The fun part is these can be used for both sweet and savory dishes. Since lately we have been experimenting with Melissa d'Arabian recipes we decided to try her Chicken Pot Pie Turnovers. This recipe is not the simplest. It does ...

Nectarine Cream Cheese Burritos

School has started for us and with two Little Chefs gone all day Little Chef D is desperate to do something fun just with Mom especially when Little Chef H is taking a nap. We made Chocolate Nectarine Burritos for an afternoon snack. When Little Chef D saw more nectarines available to eat she wanted to make something else. Food for her is easiest to eat when it is rolled up so we came up with Nectarine Cream Cheese Burritos. It is easy for any Little Chef to spread some cream cheese on a ...

Orange Glazed Chicken

Chicken is always in our freezer. I love a quick chicken recipe that I can make at a moments notice. There are always days when nothing goes right and its dinner time in 30 minutes and nothing is planned. This chicken recipe has common ingredients; chicken, orange juice concentrate, honey, salt and pepper. It takes a few minutes to prep and only 15 minutes to cook. In a small saucepan add orange juice concentrate, honey, salt and pepper. Let it boil for about 3 minutes. This will thicken ...

Corn Saute

I love quick side dishes so when we saw Corn Saute from Melissa D'Arabian we wanted to give it a try. The recipe does call for red peppers but because the green are half the price we opted for those. I do agree the red would add some much needed color to the completed dish. Today I thought I'd teach my Little Chefs how to cut in a line. The green pepper was cut in long strips. I showed them how to line up the strips and then cut cross wise. This not only cuts the peppers quicker, but it ...

Chocolate and Nectarine Burritos

It is fruit season and we love to eat many varieties fresh, but we have also been finding other ways to incorporate fruit. We ALWAYS have tortillas in our freezer. We like buying the uncooked kind. We take only one package out of the freezer to defrost and use at a time. Sometimes we cook a few more tortillas then we need. That is fine because we put the extra cooked tortillas in a ziploc and keep it in the refrigerator. As we were wondering what to do with some nectarines we acquired ...
