Strawberry Rocky Road

Strawberry Rocky Road is one of my favorite desserts as a kid…ok, I still really like it! I remember my mom making angel food cake from scratch so many times. Baking it in the oven and then flipping it over on top of an empty glass soda bottle that was kept under the kitchen sink for this purpose only-according to my recollection. When it was cooled for some reason mom always carefully broke off the more browned crunchy parts and passed those out to eat before dessert time. Those crunchy parts were my absolute favorite. I still look for those parts on the cake myself!

In 2012 my mom showed my Little Chefs how to make Strawberry Rocky Road while visiting at their cabin. My kids LOVE cooking with Grandma. They fight over whose turn it is this time. Usually there are too many anxious cooks for one Grandma so I get called in for reinforcements. Grandma taught them how to cut the strawberries with a real knife! Since then she has found a strawberry slicer that is even more fun then a knife and much quicker. It is a great kitchen tool!

This time homemade angel food cake was not made and used. We cheated to make the recipe super quick everything was store bought; angel food cake, strawberry glaze and whipped topping. The Little Chefs were able to make this on their own from start to finish in less then 30 minutes-short enough that they did not loose interest.

If you have more time go ahead and make the angel food cake and grab one of those Junket strawberry packets and follow the recipe on the back to make it on the stove top for the glaze. Either way, you have the option of eating it immediately, or letting it chill in the refrigerator for a short time before consuming.

Ingredients
  • Angel food cake, fully baked - homemade, or store bought
  • Strawberry glaze - premade or Junket strawberry glaze made according to the package on the stove top
  • One carton of strawberries, sliced
  • Whipped cream - whatever form you choose
Instructions
  1. Cut the angel food cake in bite sized pieces.
  2. In a 9x12 baking dish line the bottom with half of the pieces of angel food cake. Add half of the sliced strawberries. Add half of the strawberry glaze.
  3. Repeat for the second layer.
  4. Chill in the refrigerator for an hour if you want the glaze to set up or eat it immediately with a dollup of whipped cream on the top.
