Casserole Night With Country Crock #CountryCrockStars

With my Little Chefs, life tends to get a bit crazy…..especially at dinner time. Those are the times we pull out the casserole recipe cards. Casseroles are a fast, simple, and not to expensive way to feed our family. We love that we can toss the ingredients together and cook – this allows me to help my Little Chefs with homework, reading or just to play with them and have fun while dinner is cooking.

Reasons we LOVE casseroles –

  • We can get Creative – many times, my Little Chefs will search the fridge for other veggies to cut up and add to our chicken casserole. The more the merrier, and most of the time it tastes so good! The variations to a casserole seem endless. 
  • Casseroles are great way to use up left overs. We typically will have our casserole night at the end of the week – we will pull out all the leftovers and see what type of casserole to make.
  • We love the fact that we can make the casserole a head of time. Soccer games always seem to be right at dinner time. So, it is nice to be able to make the casserole, cover, and put it into the fridge. Then once we get home from a long evening of soccer games, we can just pull out the casserole, throw it in the oven and we are ready to eat!
  • They are easy to freeze.  With many casseroles, I will make a double batch and freeze the other pan for another day.

We made a yummy Tortellini Garden casserole with Country Crock! It is one of our favorite casserole recipes to make. We simply head out to our garden, pick what vegetables we want, and throw them together with some chicken and tortellini, and cover it all with a yummy sauce.
