On Monday we showed you how to store winter and summer squash. On Tuesday we shared with you Fire Wire Beef Kabobs. Today we are sharing with you Grilled Zucchini Halves. Zucchini seems to be one of the easiest things to grow around me and everyone has more then they can eat! I love zucchini when they are about 8″ long and thin. Grilled Zucchini Halves are so simple to prepare with only 4 ingredients!

Cut the ends off your zucchini and/or summer squash. Cut in half lengthwise.

On a plate pour a couple tablespoons of olive oil. Rub the zucchini halves in the olive oil on all sides. My Little Chefs do not love this job. When I tell them someone gets to rub olive oil all over the zucchini and the other gets to season it afterward they always want to be the one seasoning. None of my Little Chefs like to get their hands dirty. So I usually end up telling them to work together. They can both gets their hands dirty, go wash, and then season with kosher salt and freshly ground pepper.

Now it is Little Chef Dad’s turn to place on the grill, turning occasionally until tender. When finished he moves them to the top rack to keep warm while the Fire Wire Beef Kabobs are finishing.

My Little Chefs love this recipe! I cut the halves into bite sized pieces for ease of dishing up and eating. Come back tomorrow for Sweet Potato Packets!

Grilled Zucchini Halves

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Ingredients

  • Zucchini and/or Summer squash
  • Olive oil
  • Kosher salt
  • Freshly ground pepper

Instructions

  1. Cut the ends off your zucchini and/or summer squash. Cut in half lengthwise.
  2. On a plate pour a couple tablespoons of olive oil. Rub the zucchini halves in the olive oil on all sides.
  3. Sprinkle zucchini with kosher salt and freshly ground pepper.
  4. Place on grill, turning occasionally until tender.
