Dill Grilled Potatoes in Foil

We are loving the weather and the opportunity to grill. My Little Chefs enjoy helping with easy recipes like these Dill Grilled Potatoes in Foil. The preparation is easy and the clean up is even easier.

Dill Grilled Potatoes in Foil is one of those easy dinner recipes that is simple to prepare and simple to clean up.

 

I love cooking with potatoes because they are cheap and versatile. Peeling potatoes is an easy task my Little Chefs are able to do. I have so many helpers I have had to buy more potato peelers! I also love cooking in foil packets. Usually packet meals are easy to prepare because everything is incorporated together and then folded carefully inside foil. If you are careful all the juices will be trapped inside. The only clean up is to throw away the used foil.

Because I have so many little mouths, I like to cut the potatoes in half before slicing so they are smaller in size to eat. Cutting the potatoes and dicing the onion is the hardest part. The next step is measuring the garlic salt, pepper, oil, garlic and dill. My Little Chefs have learned how to measure dry and wet ingredients so they can do this step alone.

Everything is then mixed together to combine well. I tell my kids, when we can see the dill on all the potatoes that is when we stop stirring. They understand each bite should have a little of everything to make it taste the absolute best. Dill Grilled Potatoes in Foil is one of those easy dinner recipes that is simple to prepare and simple to clean up.

We work together to wrap up the potatoes in foil because it can be a little tricky. I like to nicely fold the packet kind of like wrapping a present. We then give the packet to Dad, if he is home, to place on the preheated grill. We start our potatoes before the meat so that everything is done at the same time.

When the potatoes are finished, cut a slit in the top of the packet to let out the steam. Quickly throw in some shredded cheese to melt. Serve yourself some potatoes and then add a dollup of sour cream. (These potatoes are delicious without the cheese and sour cream addition.)

All my Little Chefs love these potatoes. This is a common side dish when we grill. They are easy to make and easy to clean up.

Dill Grilled Potatoes in Foil

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients

  • 4 potatoes, sliced
  • 1/4 yellow onion, diced
  • 1 teaspoon garlic salt
  • 1 teaspoon pepper
  • 4 Tablespoons garlic infused olive oil
  • 1 clove garlic
  • 1 teaspoon dill
  • shredded cheese
  • sour cream

Instructions

  1. Slice the potatoes. Dice the onion.
  2. In a medium bowl add the potatoes, onion, garlic salt, pepper, oil, garlic and dill. Stir to combine.
  3. Cut a large piece of foil. Add the potato mixture to the middle of the foil. Wrap the foil to completely seal.
  4. Place on the grill for 20 minutes. Flip once halfway through.
  5. Slice open the foil. Add the shredded cheese immediately to melt, then add the sour cream.
  6. Serve while hot.
