With school out and Summer is here – We have more time in the mornings to make lots of fun things for breakfast. We LOVE breakfast, and we needed some more ideas to mix things up from the typical pancakes, waffles, and french toast. I asked what the Little Chefs wanted for breakfast, on the first day out of school – and their response – pizza. The Little Chefs were so surprised when I agreed that pizza would be a great idea…..that is Breakfast Pizza.

To make our Breakfast Pizza, we just used up items we had in the house, well actually the cabin. When we made this recipe we were up in the mountains at Grandma and Grandpa’s cabin, one of our favorite places to go – spending some much needed family time. We first flattened and rolled out 12 thawed rolls – you could really use what ever frozen dough you have in your freezer. Then we pressed them all together to make a crust.

We then added the cooked sausage and topped with the frozen hashbrowns. Again, you can use a regular potato, peeled and shredded. Or like us, we had neither, so we used the boxed hashbrowns – you just add hot water to the carton and let it sit for about 10 minutes and they are ready to go!

Next, the Little Chefs got out the red peppers we had on hand, chopped them up and added them to the Breakfast Pizza.

We then got out our monterey jack cheese, and because we only had slices, we just chopped them up – But you can also just use shredded! The Little Chefs whisked the eggs and milk in a small bowl and poured it on top of the cheese.

They were so excited to be able to have Pizza for Breakfast!! It was a fun and different recipe to make for breakfast and was a huge hit. The only thing we would suggest, is to make sure you flatten or roll the dough really thin, if not you will end up with a really thick crust. This was a delicious yet simple recipe, simple enough to even make up at the cabin!!

Breakfast Pizza

Ingredients

  • 1 dozen frozen rolls, thawed
  • 1 lb pork sausage, cooked and drained
  • 2 c frozen hashbrown potatoes
  • 1/2 c green or red pepper, chopped
  • 1/2 c onion, chopped
  • 1 c grated monterey jack cheese
  • 4 eggs
  • 1/2 c milk
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 375 degrees
  2. Flatten rolls and press together to form a single crust
  3. Place on a well greased 18" X 13" jelly roll pan
  4. Sprinkle pork sausage and hashbrowns over dough
  5. Add the peppers and onions to the top
  6. Cover with grated cheese
  7. In a small bowl, whisk together the eggs, milk and salt and pour over the top of the cheese
  8. Bake 20 - 25 minutes

    Um… YUM!! What a fabulous idea. I’m not a big fan of breakfast, so this mash-up makes breakfast so much more appealing to me and it’s a fun activity for us all. Thanks for the post!
