Grilled Potatoes and Mushrooms in Foil

  • 4 potatoes, sliced
  • 5 small mushrooms, sliced
  • ¼ yellow onion, diced
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 4 Tablespoons chili pepper infused olive oil
  • 1 clove garlic, minced
  • 1 teaspoon dried parsley
  1. Preheat the grill.
  2. Slice the potatoes and mushrooms. Dice the onion.
  3. In a medium bowl add all the ingredients. Stir well to combine.
  4. Cut a large piece of foil. Add the potato mixture to the middle of the foil. Wrap up completely sealing all edges.
  5. Grill for 20 minutes flipping halfway through.
