Grilled Potatoes and Mushrooms in Foil

- 4 potatoes, sliced
- 5 small mushrooms, sliced
- ¼ yellow onion, diced
- 1 teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 4 Tablespoons chili pepper infused olive oil
- 1 clove garlic, minced
- 1 teaspoon dried parsley
- Preheat the grill.
- Slice the potatoes and mushrooms. Dice the onion.
- In a medium bowl add all the ingredients. Stir well to combine.
- Cut a large piece of foil. Add the potato mixture to the middle of the foil. Wrap up completely sealing all edges.
- Grill for 20 minutes flipping halfway through.
