Danish Puff Chop

Ingredients
  • 2 Tablespoons butter
  • ⅓ cup flour
  • ⅔ cup milk
  • 1 egg
  • 1 small onion
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 4 pork chops
  • salt
  • pepper
  • sage
Instructions
  1. Preheat oven to 350 degrees.
  2. In a small saucepan over low heat melt butter.
  3. Add flour. stir.
  4. Add milk. Stir.
  5. Cook until very thick. Keep stirring.
  6. Add egg and cook over low heat "beating like fury."
  7. When shiny-thick, remove from heat and add remaining ingredients.
  8. Season both sides of each pork chop with salt, pepper, and sage.
  9. Sear one side in a skillet over high heat.
  10. Place each seasoned pork chop on a parchment lined cookie sheet seared side up.
  11. Add a scoop of the batter on top.
  12. Bake in preheated oven for 25 minutes or until internal temperature is 170 degrees.
