Oatmeal Chocolate Chip Peanut Butter Bars

Ingredients
  • 3 cups quick oats (not rolled)
  • 1½ cups all-purpose flour
  • 1½ cups brown sugar
  • ½ teaspoon salt
  • ¾ teaspoons baking soda
  • 1 cup margarine
  • 1 (14 ounce) can sweetened condensed milk
  • ¾ cup peanut butter
  • ½ cup milk chocolate chips
  • ½ cup vanilla (white) baking chips
  • ½ cup sliced almonds
Instructions
  1. Preheat oven to 350 degrees F. Line a 9x13 pan with foil and spray with nonstick spray.
  2. In a food processor combine oats, flour, sugar, salt, baking soda and margarine. Pulse until it forms a crumbly mixture.
  3. Take out 1½ cups of this mixture (doesn't need to be exact) and set it aside for the top.
  4. Press the remaining oat mixture evenly on the bottom of the prepared pan.
  5. Spray a microwave safe bowl and spatula (or other mixing utensil) with non stick spray. Add the condensed milk and peanut butter. Microwave for 30 seconds. Mix well together. Pour on top of the oatmeal mixture in the prepared pan. Spread evenly to fully cover the bottom layer.
  6. Sprinkle the chips and almonds on top of the peanut butter mixture.
  7. Add the reserved oat crumble mixture to the top.
  8. Lightly press the top layer down.
  9. In the preheated oven bake for 25-35 minutes, or until golden brown. Watch the edges, they will turn brown first.
  10. Cool completely then cut into bars.
