Vanilla Mixed Berry Popsicle

Vanilla Mixed Berry Popsicle from fivelittlechefs.com A fun summer treat to cool you down. #popsicle #vanillaberry #recipe

Popsicles are a big part of summer in our house. My Little Chefs go outside to play but then it seems almost immediately they come back in asking for a popsicle. I’m amazed at what they can do with a popsicle hanging out of their mouths! We found they molds one day while shopping and thought we could try making our own. The good part is the mixing of the ingredients is very quick. The bad part is they have a hard time waiting for four hours until they are sufficiently frozen to eat.

In a bowl add the berries, sugar and vanilla extract. Let sit for about 15 minutes to produce juice.

In a blender add the berry mixture and yogurt. Blend until smooth.

Strain mixture through a fine strainer to omit as many seeds as possible. If you can tell from the picture we did not strain the mixture and it was very seedy..if that is a word. The Little Chefs didn’t complain about it but I certainly did not enjoy it as much as I wanted to because of the seeds.

Freeze in popsicle molds until firm, approximately 4 hours. Makes 6 popsicles.

My Little Chefs thought this was so much fun they want to try making more in different flavors. What are your favorite popsicle flavors?

I am a mom to Five Little Chefs who love to cook and create anything with their hands. Watching over 10 additional hands keeps me busy but is so much fun! We laugh and cry everyday, but then want to do it again the next day. That is how we know we are enjoying life!
