Roasted Mixed Vegetables with Basil

  • 5 baby eggplant
  • 2 medium zucchini
  • 1 orange bell pepper
  • 1 red onion
  • 1-2 Tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon dried basil
  1. Turn the oven on to 450 degrees F. Line a baking sheet with parchment paper or foil.
  2. Cut the eggplant, zucchini, pepper and onion into similar size pieces. Place everything in a bowl.
  3. Add the olive oil, salt, pepper and basil. Stir gently and well to combine.
  4. Place on the lined baking sheet.
  5. Bake for 20 minutes.
  6. Serve immediately.
