Breakfast Burrito

Do you ever shop at the grocery store thinking about what to make for breakfast for your house guests?  Frozen and refrigerated foods are great because a lot of the hard work is done. When you are up late having fun the last thing you want to do is get up super early to make something delicious. Why not get a little help from the frozen and refrigerated sections while you sleep in just a little bit longer.

One thing I especially love about frozen foods is that I have the option to use an entire bag or I can use half then close it back up and use the remaining half at a later date. I am not wasting any food because I only needed a portion of the food. Some of my easiest customizable meals come from the freezer section, yet they are still delicious and most definitely are affordable.  Breakfast Burritos is one of those customizeable meals.

Ingredients:

  • Breakfast Sausage, cut in bite sized pieces
  • O’Brien Potatoes
  • Tortillas
  • Shredded Cheese
  • Sour Cream
  • Salsa
  • Eggs
  • Salt and pepper to taste

In one skillet cook the potatoes according to package instructions. In a second skillet cook your tortillas. We like to put the cooked tortillas in a tortilla warmer, or in the middle of a folded over clean kitchen towel. In the tortilla skillet cook the breakfast sausage.  When potatoes are done transfer them to a plate. In the potato skillet cook the eggs. When the sausage is done add the potatoes and the eggs. Combine well.

Place a tortilla on a plate and smear it with sour cream. Add shredded cheese and salsa on top. Next add the potato, egg, and sausage mixture. Roll into a burrito.

This meal was easy enough my Little Chefs were able to do it almost entirely on their own. The potatoes would have been hard to dice perfectly. We saved time and used the frozen mix which also included onions and peppers!

We used one half of the breakfast sausage, one half of the potatoes ‘obrien and 6 eggs to make 8 burritos. I love the convenience of this meal. I can have all these ingredients in my freezer and refrigerator for breakfast, brunch, or even breakfast for dinner. It is a great go to meal! The ingredients from the refrigerated aisle are the food we daily use. Tortillas, cheese, sour cream and salsa are staples in my house. They are always on my shopping list!

    Love these burritos. This is now my favorite recipe for me. Just grab the stuff from the freezer and we are ready to go. The potatoes and bell peppers just make it perfect.
